Foods I'm Eating

The only thing I like more than cooking is eating. We cook everything over charcoal, and bake in a big pot. Some of our best creations have been photographed, and appear below:


Matapa on Coconut Rice:
This is a traditional Mozambican dish, here made
with pumpkin leaves, peanut flour, tomatoes, garlic,
and fresh coconut milk.









Honey Roasted Peanuts:
Mr. Peanut makes this look deceptively easy.


 
For the love of God, someone send us more Parmesan.









Spicy Eggplant Parmesan
We thinly sliced and fried the eggplant, and smothered it in piri piri tomato sauce.













Grilled Eggplant in Sweet and Sour Sauce, over noodles. A weird combination, but one of the best meals we've had.










Cucumber Peanut Curry. Everything tastes better over white rice, and when eaten with chopsticks.











Jamie is great at all things Asian.


Pho. Mozambique style. Yes, those are ramen noodles.



Great on street bread.
 Mango Cinnamon Jam. It cost us less than a dollar to make this. Mangos are about 8 cents a pound here. This was seriously amazing, and we have plans for guava and papaya jam, then tangerine marmalade.


Tuna Melts. This was one of the best sandwiches I've ever had: tuna salad with grilled onions and mayo, topped with bajias (bean patties sold on the street) and velveeta. Ermahgerd.









 Buttermilk Biscuits with Rolled Oats and Cinnamon. Our neighbors loved our "American bread."
